Day 39

It's official, I found my new favorite website. It is called $5 dinners (http://www.5dollardinners.com/) and I think it's a college student's dream!! It has an index of tons of recipes for less than five bucks and most of it actually sounds pretty good. I don't have a ton of time to cook during the week (although I do enjoy it as a stress reliever) but what is great about these recipes is they don't require much work. On the topic of food.. I want to share one of my favorite dinner recipes for Vegetarian Black Bean Burgers that is simple and delicious. I hope you try it!!

Ingredients:
  • 1/2 onion, diced
  • 1 can black beans, well drained
  • 1/2 cup flour
  • 2 slices bread, crumbled
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp seasoned salt
  • salt and pepper to taste
  • oil for frying

Preparation:

Sautee the onions till soft, about 3-5 minutes.

In a large bowl, mash the beans until almost smooth. Add sauteed onions and the rest of the ingredients, except the oil, adding the flour a few tablespoons at a time to combine well. Mixture will be thick.

Form bean mixture into patties, approximately ½ inch thick and fry patties in a small amount of oil until slightly firm. Make veggie burgers and enjoy! Add avocado slices, salsa, and pepperjack cheese for a delicious meal.

Sometimes, it really IS the little things in life that can bring a smile..even something as simple as a great, homecooked meal!
